Boxes are shipped on the third Monday of the month. For this month's Cheese of the Month boxes, they should arrive on or before the 17th of August. 

The cutoff to order a subscription starting in  August is August 10th. Any Cheese of the Month Subscriptions placed after August 10th will start to receive boxes in September. 

Selections for August: 
 This month is all about the appreciation of the artisans from different regions and their craftsmanship, the cheesy classics done right. For the Month of August, we have three cow’s milk, hard cheeses, made with old world traditional methods at small, family-owned farms of Italy, Switzerland, and England.

Cravero Parmigiano Reggiano (Included in all three boxes)
Parmigiano Reggiano is aged by affineur Giorgio Cravero using traditional, family-passed techniques since 1855. This Italian aged cheese is raw cow’s milk based, with a minimum aging  of two years, after which Cravero assesses each wheel by hand to determine if they’re ready. The result is an artisanal cheese like no other. Buttery, nutty, and a rich flavor profile with a full texture. Pair with pecans, walnuts, and dried fruits such as apricots, figs, and plums. 

Gourmino Gruyere, 12 month(Included in all three boxes)
Born in the Fribourg region of Switzerland, this is an alpine superstar. Gourmino Gruyere has won the title of World Cheese Champion not once, but three times! This AOP Gruyere is made in the mountain dairy of Frizenhaus starting with raw cow’s milk which is aged for 12 months, giving it specs of crystals, a slightly crumbly yet creamy texture and notes of sweet stone fruit, roasted chestnuts, and vanilla. Pair with a malty beer, or mustard! 

Neal’s Yard, Montgomery Cheddar(Included in the Cheese Only Box)
Since 1911, Montgomery’s Cheddar has been made at Manor farm, using raw milk from their own herd of Friesian cows. Named after Jamie Mongomery, these wheels go through the process of ‘cheddaring,’ which involves stacking slabs of curd on top of eachother which helps to drain out whey. The slabs are then cut up and stacked again! The traditional methods of this cheese bring about a classic old-English cheddar, aged 18 months, with rich, savory flavors that melt in the mouth.

Casella’s, Prosciutto (Included in the Cheese & Meat Box)
New York’s very own Casella’s brings back the old traditions of Italy’s norcini, artisan butchers who prepared, seasoned, and aged exquisite meats. Only the highest quality ingredients are used, starting with sourcing pigs from ethical, pasture-raised, small family farms around the United States. The juicy, tender and delicate meat comes from a slow, on-the-bone curing process of the Consorzio del Prosciutto.

Maestri d’Italia, Salame Rustico (Included in the Cheese & Meat Box)
Maestri d’Italia brings Italy straight to your board with this salame. Simple and classic seasonings are used, for a delicious charcuterie that can pair with just about anything. Eat right out of the package for a delicious lunch or decorate your board with this friendly, umami-filled salame!

Maison Marou, Bến Tre 78% (Included in the Cheese & Chocolate Box)
Maison Marou believes in sustainable, socially responsible, ethically transparent, delicious, and great tasting chocolate. Cacao is sourced directly from local farmers around Vietnam, and named after regions around the country. Just off of the Mekong Delta, the Bến Tre province provides the cacao for this bar. A 78% dark chocolate with notes of dried coconut, and sweet banana.

Pump Street, Ecuador (Included in the Cheese & Chocolate Box)
English chocolatiers, Pump Street, brings the classic Ecuador bean from the Hacienda Limon Farm, in Los Rios Province. Made from an Arriba Nacional bean, under the Heirloom Cacao Preservation, this delicious bean can be found along the Guayas Basin, a fertile coast rich in minerals. From the perfect cocoa bean comes the perfect chocolate bar! A versatile, rich, caramelly, nutty, flavor.
