The creamy nuttiness of a classic Swiss alpine (think gruyere) gets a new, funky twist form contemporary cheese production methods. Made by Alphons Vogel, a third generation cheese maker in Steinerberg, Switzerland, Wildspitz derives its unique flavor from the combination of 5% raw goat's milk and 95% raw cow’s milk. The cheese is then repeatedly washed with saltwater brine throughout the aging process to further elevate the flavors. It derives its name, Wildspitz, from the mountain that sits between the two alpine communities that supply the fresh milk (Steinerberg and Oberaegeri)—truly taking alpine funkiness to new heights!
Strong herbal notes get a final tangy kick thanks to the goat’s milk. The texture is smooth and creamy, perfect for melting into sandwiches and atop soup. Given its rich earthy flavor profile, we recommend pairing with a lighter, fruitier red wine such as pinot noir.
