1924 Bleu from Herve Mons is a blend of both cow and sheep’s milk made in the traditional Roquefort method in Auvergne, France. 1924 continues aging here in the States, developing an extra creamy interior. The natural rind contributes a rustic, woodsy aroma and a mushroom flavor that balances out the blue cheese tang.
