Bufarolo is Crown Finish Cave's only imported cheese, made with Buffalo milk at the Gritti Family Farm located in Bergamo, Italy. Bufarolo is aged for about three months, allowing the cheese to form a natural rind. The cheese itself is creamy, fudgy and tastes bright and lemony. The rind, when eaten, is more mushroomy and earthy. 

Crown Finish Cave is a affinage (a cheese aging facility) located underground, right here in Crown Heights, Brooklyn. Crown Finish Caves takes young cheeses from cheesemongers all over the US (and some from Europe) and ages the cheese right in their cheese caves.
