Our Comte Reserve from Rivoire Jacquemin. Made from raw Cow's milk, only from the summer, aged for 24-30 months. The longer aging process along with the use of the summer milk makes this Comte pleasantly fruity, buttery, and lightly salty.
The maker, Rivoire-Jacquemin, is a five-generation company. Breaking away from the traditional barrel ripening process, Alix Jacquemin invented the cave ripening process. Today, their first rate maître affineur (cave master) supervises each and every wheel with constant care: salting, rubbing, flipping, and monitoring the aging process. Rivoire Jacquemin prefers using the slower traditional method: requiring a traditional know-how, unlike cheeses made in large scale production, resulting in a standardized product with no personality. Rivoire Jacquemin is the only affineur that rubs Comté with Guérande sea salt. In their 38 cellars, they only use spruce planks from Jura to shelve their wheels. State of the art thermostat technology allows their cellar managers to fine-tune temperature and humidity to optimize ripening.
