For more than 100 years, the Pasamontes family has been making this Manchego on their farm in the La Mancha region of Spain. Today, M. Dolores Palomares Pasamontes leads the operation using only the milk from her herd of 200 sheep and traditional methods such as aging naturally without wax. In the end, Dolores’ dedication to her cheese has earned this Manchego numerous awards including the Gold Medal at the Gran Selección 2012.
