A raw sheep’s milk cheese with a varied flavor profile of nuts, mushrooms, olives, and rich cream. A tangy aroma stems from the natural rind, but doesn’t effect the creaminess of the taste. The milk comes largely from French farms near the creamery in Hélette, in the heart of the pays Basque, near the Spanish border. Very similar flavor profile to Ossau-Iraty.
