La Dama Sagrada - An aged, raw goat's milk cheese from Spain, imported by the specialty food company Mitica. The name translates from Spanish to "The Sacred Lady".It is produced in the Castilla-La Mancha region of Spain, in the heart of Manchego territory. It is made at the dairy Señorio de la Mancha, with milk sourced from a cooperative of local Murciana goat farmers. The head cheesemaker is a woman named Fátima.It is an unpasteurized, hard cheese aged for a minimum of 6 months. It is known for its sweet, full, and grassy flavors with a bright, tangy finish and a creamy texture that develops tyrosine crystallization (protein formations) as it ages. It is produced in small batches, making it a specialty item that can be difficult to find, sometimes referred to as a "Spanish cheese unicorn
