Woodlawn Creamery in Vermont makes Emerson, an artisanal fresh farmer's cheese. Made with pasteurized cow's milk from the farm's own Holstein herd and named after the "Emerson Meadow" on the farm, Emerson is a fresh, unripened cheese similar to cottage cheese but firmer and drier in texture as a result of pressing the curds. It's a perfect breakfast spread or substitute for ricotta in casseroles and other dishes.
