

The Grafton Cooperative Cheese Company was founded by dairy farmers in Vermont in 1892. Today it is a mission driven business, part of the nonprofit Windham Foundation, which is dedicated to promoting Vermont's rural communities. More than 100 years later, they still make their cheese by hand using premium raw/unpasteurized milk from small, local family farms.
Shepsog has been winning awards since 2012. A dusty gray and white mottled edible natural rind has a firm texture that echoes the curd structure of the cheese. Complex and earthy, Shepsog develops a butter-yellow semi-firm paste while it is cave aged. Expect aromas of cultured butter and fresh buttermilk, alongside bright lemony and sweet flavors with notes of caramel and a clean, nutty finish.
