Made by the Gervais family on their farm in Enosburg, Vermont this cheese is truly Trés Bonne! The Gervais have been making cheese on their dairy farm, Boston Post Dairy LLC (named for the Boston railroad that runs straight through the property), since 1962. Today with the help of their children, the family produces some of our favorite Vermont farmstead cheeses.
The Trés Bonne: A versatile goat’s milk cheese with a relatively short aging process of two to five months. It’s nutty, yet not as pungent as aged Gouda from Holland; the shorter aging period lends a fresh, milky flavor.
