This P.D.O. cheese is produced in Zamora, Spain, in Castilla and León, an area well-known for cheese making since the pre-roman era. Similar to Manchego and once sold under that name, Zamora received its own name and protection of origin status because it is produced in a different region and from the milk of different breeds of sheep - Churra and Castellana.
Zamorano is made seasonally from the end of the winter months through to the end of the summer and has a distinct underlying sweetness and aroma of butterscotch and sweet cooked butter.
