Alta Langa Bocconcino

Bocconcino, or “little mouthful,” is a take on the traditional Piemontese tomino. For Bocconcino, Alta Langa uses only goat’s milk, highlighting its distinctive character. As a table cheese, Bocconcino has a supple, creamy texture and a clean, gently goaty flavor. When warmed—as is traditional in Piemonte—the flavors open up, becoming more seductive and pungent. The cheese softens and turns slightly oozy, held together only by its thin, bloomy rind.
