Appenzeller is an AOC protected raw milk, cooked, pressed, washed rind cheese known for its dense creaminess and light spice. It's made in only 60 dairies that follow a strict recipe including the secret brine made with 42 herbs and spices. Creameries mark the age of each wheel with a different color label. Appenzeller Extra sports a black label representing six months aging time. The extra aging gives this wheel a sharper more robust flavor.
