Arethusa Tapping Reeve

To honor the legacy of local lawyer Tapping Reeve, founder of the Litchfield Law School in the late 18th Century, Arethusa farms hit the history books to develop a Colonial-style cheese. What they created is both sharp and refined, not unlike its namesake. A hybrid of cheddar and alpine cheeses, Tapping Reeve features milky flavors with finishing notes of brown butter.
