

Baldauf Kase is the oldest family owned creamery in Germany, making cheese in the Allgau alps since 1862, and now run by fifth generation family members. . All of their cheese is made from the fresh milk of Allgäuer Braunvieh (Allgau Brown) cows, a hearty breed from the region that are only fed high mountain pasture in the summer or fresh hay in the winter. Milk is delivered daily from farms, whose average size is 20-30 cows.
Chilikaas is a younger alpine with crushed red pepper on the paste. The paste is very tasty with almond notes and the spice level is moderate.
