Jasper Hill Whitney is an award-winning, meltable mountain-style cheese made from raw cow's milk at Jasper Hill Farm in Vermont.Modeled after traditional Alpine cheeses like Raclette, it has a smooth, supple texture with a flavorful washed rind. 

  • Milk: Raw cow's milk from Jasper Hill Farm's grass-fed herd.
  • Aging: 3–6 months. The rind is washed with a brine cultured with yeast from a Vermont natural winery.
  • Flavor profile: Features a balanced, buttery smoothness with notes of toasted nuts, cured ham, cooked onions, and sweet cream.
  • Texture: Velvety-smooth and pliant.
  • Uses: Excellent for melting, making it a perfect choice for mac and cheese, burgers, grilled cheese, or a traditional raclette part
