


Christian Oberl is a third generation Swiss cheesemaker working with milk from 28 farms within a radius of just 10 km from his creamery. Old Witch is the older sister of his festival cheese, Red Witch. Oberl and his team select the finest wheels of Red Witch, separate them and age them for an additional four months without the piquant addition of paprika. In her ripe old age of 8 - 9 months, Old Witch stays custardy sweet with notes of creme fraiche.
