Antoine Maille opened his first store in Paris in 1747, selling high quality mustards and vinegars. He quickly became the official supplier to the King of France, the Imperial Magesties of Austria and Hungary, and the Empress of Russia, and the company's recipes remain the same to this day.

Maille's Cornichons (French-style gherkins) are the consummate accompaniment to pate or rillettes.
