Ilhopan Bolo de Mel is a traditional Portuguese "honey cake" from Madeira, Portugal.
The key ingredients are sugarcane molasses (mel de cana) rather than bee honey, it includes nuts (like walnuts and almonds), spices (such as cinnamon, cloves, and anise), candied fruit, butter, lard, flour, sugar, and Madeira wine.Bolo de Mel is known for its rich, deep flavor with hints of caramel and spices due to the molasses. It has a dense and moist texture,  resembling a soft cookie. It's considered one of Madeira's oldest desserts, with origins dating back to the 15th century. It was originally made by nuns at the Convent of Santa Clara in Funchal. It's customary not to cut Bolo de Mel, but to break off pieces by hand. It pairs well with tea, coffee, or Madeira wine.
