High Lawn Queen

High Lawn Farm in the Massachusetts Berkshires has been breeding Jersey cows for over 100 years.  Their cows produce about four times as much milk with 17% more protein and 20% more calcium per unit than average cows.   They graze on farm grass during the summer an farm grown hay and corn during the winter whil lounging on water beds!  All to produce some of our favorite East Coast cheese.

High Lawn Queen has the texture of soft butter and a sharp tang when young. The rind has yeasty, fresh dough notes. And the interior texture matures into creamy, melted cheese and the rind takes on a hint of mushroom as it ages.
