This raw sheep’s milk pecorino cheese with black truffles comes fom the Italian island of Sardinia. Unlike most truffled cheeses, the truffle paste is infused after Moliterno has been aged for 4 months which allows the cheese to develop its own character before the truffles are infused. The wheels cheese then matures more and the truffle essence spreads throughout.
These wheels are rubbed with vinegar and olive oil as they age, highlighting the subtle bite already present in the cheese, and guarding against any escape of truffly-goodness.
