Finback is an American original cheese made from milk curds produced over two days, based on the recipe of some of the world's traditional large format cheeses like Lancashire, Castelmagno, Cantal and Salers. Intentionally crumbly and creamy with an upfront bright lactic punch that fades slowly into bold, complex brothy and savory notes. Winner of a 2023 Good Food Award.

Founded in 2013 on a farm in Lebanon, CT, Mystic Cheese originally concentrated on fresh and young cheeses and crafts aged and uncharted styles in a state of the art self-sustaining facility in Groton. They source our milk exclusively from Connecticut farms that share a commitment to animal welfare and rigorous standards for milk production.
Nationwide Shipping
We ship select items nationwide from Brooklyn, NY. Please note: we are unable to ship to P.O. Boxes.
Shipping is available at a flat rate of $25, with expedited and overnight options available at checkout.
At checkout, you’ll choose your shipping speed and ship date (the date your order leaves us), not the delivery date. Most orders arrive within 1–2 days of the selected ship date, even when Standard Shipping is selected.
To protect perishable items, ship dates are available Monday and Thursday and may be limited during warmer periods. Please ensure someone is available to receive perishable deliveries.
