Melinda Mae is a soft-ripened, Robiolo-style cow's milk cheese from The Mystic Cheese Company. An ivory-coloured, smooth silky rippled paste enveloped by delicate and pillowy gauze of white mould. The soft oozing paste has a fruity fragrance with musty forest floor mist. As the cheese matures, it becomes pungent and piquant, moving onto subtle sweet and savoury notes. If you like taleggio and brie, give it a try.
