

It's back! The venerable Morbier cheese, known for its midline of ash, was temporarily banned in the US, but no longer!. Morbier was born in the 18th century when local Franche-Comté farmers had difficulty delivering milk to the village cheese dairy to make Comté. The harsh climate prompted them to make their own cheese on the farm. They added the famous layer of ash atop the curd from their evening milk to protect it over nigh. The following day, in order to make a larger wheel, they covered the first curd with curd from the morning milking. A delicious cheese with an ash line was created.
A great melter, Morbier is a great choice for your raclette pan. The ash line paints a pretty picture on any cheeseboard.
