An ultra-premium, rare French Alpine cheese selected and matured by renowned Master Affineur Rodolphe Le Meunier (RLM). Aged for a full 36 months, this unpasteurized raw cow’s milk Comté develops an exceptionally dense, firm texture and an abundance of crunchy white tyrosine crystals, prized for their savory bite.
Far more intense than younger Comté, this exceptional cheese reveals layers of toasted hazelnut, brown butter, roasted coffee, and rich beef broth, followed by a long, lingering caramelized finish. RLM personally selects outstanding wheels from the Jura’s finest fruitières and carefully matures them on spruce boards under precise temperature and humidity conditions, allowing the cheese to reach its fullest expression of Alpine terroir.

Shipping is available at a flat rate of $25, with expedited and overnight options available at checkout.
