Andrea Bezzecchi of Acetaia San Giacomo is recognized as an award-winning producer of exceptional balsamic vinegars in the Reggio Emilia district of Italy. Acetaia San Giacomo is a place strongly rooted in the land. The barrels and their daily work are housed in the Corte Faragosa, a farmhouse in the Emilian countryside that has its origins in the mid-1500s.
Saba: A luxurious syrup made by slow cooking only grape "must" over a direct flame until it is reduced to a third. Saba has a wonderful raisiny, caramel flavor. Its slight sweetness makes it the perfect thing to drizzle on soft cheeses and gelato.
Balsamela: Made with 100% organic apple juice cooked in the balsamic tradition. The delicate acidity of apple makes this a great choice for seasoning meats, fresh or roasted vegetables, fresh goat's cheese, or even vanilla ice cream and apple pie a la mode.
