Semi-hard cheese. As its name says, the Noix Jurassic matures with nut liqueur. This Tommette is formed in a mould that gives it its famous regular concentric lines, reminiscent of a wicker basket. During its 6 weeks of ripening in a humid cellar, the cheese is rubbed 3 times with nut liqueur from La Distillerie du Périgord in the city of Sarlat.
