An American style, cave-aged cheddar with a naturally bloomy rind and slight blue veins. What a combo! It gets its name from the local stone that surrounds the room in which the cheese is aged. It's richly colored with annatto and cave aged to maturity. A cross between a cheddar and a blue, Red Rock is more of a creamy cheddar than a crumbly blue.
