Since 1960, the Cuquerella family has made authentic Spanish cheeses with milk from small herd farms. Cabra al Vino is their take on the classic Drunken Goat, a cheese from Murcia, an area is also known for Monastrell grape wine. Cabra al Vino is soaked in wine before aging, leaving a contrasting rind and unique flavor. Cheesemakers use wine, not just for beauty and taste, but to prevent unwanted mold growth during the aging process.
