Capra Sarda is a hard yet creamy goat cheese amidst the salty, tangy, crystallized norm.
Pasty white in color with a delicate citrusy sweetness at the end, the cheese has an herbal nuttiness you would expect from an alpine. Think of it as an alpine who went south for some sun and never went back. We recommend serving with dryer, briny white wines like a Sardinian Vermentino.
