Tomme Cœur Vache Basque is a traditional semi-hard cheese.While the Basque region is famously recognized for its sheep’s milk cheeses (like Ossau-Iraty), this particular tomme is made entirely from whole pasteurized cow's milk (vache) sourced from local mountain farms. It has a supple, smooth, and semi-firm paste that becomes almost creamy at room temperature. Remarkably mild, approachable, and slightly sweet with rich, comforting notes of fresh cream, melted butter, and subtle toasted nuts.
