Griffin is made in the style of a french farmhouse cheese by Sweet Grass Dairy in Georgia. They soak the curds in an entire barrel of Terminus Porter from Gate City Brewing in Roswell, Georgia before shaping and aging. Griffin has a crumbly texture like cheddar and a malty flavor.
Sweet Grass Dairy was born in 2000 in Thomasville, GA after Al and Desiree Wehner switched their farming methods to intensive grazing and eventually started making cheese. The Dairy is now run by their daughter and son-in-law.
