By raising their own purebred Manchega sheep and growing their feed on-site, they maintain complete control over milk quality, allowing them to craft award-winning cheeses from 100% raw milk without any chemical additives or preservatives.
Their Manchego Semi Curado is aged for two to three months, yielding a supple, highly creamy texture and an elegant ivory color. It offers a clean, balanced flavor profile with distinct notes of fresh cream, butter, and yogurt, delivering a smooth finish that captures the authentic terroir of the region.
