Handcrafted from pure raw milk from Finca Pascualete’s own flock of Merino sheep. They graze on a variety of arboreal species, natural grasses, wild flowers and indigenous herbs that grow naturally in the pastures on this magnificent estate in southeastern Spain. The name Retorta comes from this cheese’s shape, a rounded disc that resembles a cake (torta in Spanish); it has a thin rind that encases a soft, creamy center. The extremely creamy texture is due to the continuous daily rotation of the cheese as It ages. The consistency is like pudding with herbaceous, vegetal and umami notes; dig in with a spoon after removing the top rind and leaving it to set at room temp for several hours.
Each piece is roughly 1/3rd of a pound.
We ship select items nationwide from Brooklyn, NY. Please note: we are unable to ship to P.O. Boxes.
Shipping is available at a flat rate of $25, with expedited and overnight options available at checkout.
At checkout, you’ll choose your shipping speed and ship date (the date your order leaves us), not the delivery date. Most orders arrive within 1–2 days of the selected ship date, even when Standard Shipping is selected.
To protect perishable items, ship dates are available Monday and Thursday and may be limited during warmer periods. Please ensure someone is available to receive perishable deliveries.
