Mt Alice is A creamy and buttery brie named for the mountain peaking over the von Trapp family farm. As the cheese ages it intensifies from mild mushroom notes with a firm paste to a more funky barnlike flavor and creamier texture.
The von Trapp family, yes, that von Trap family from The Sound of Music came to Vermont after the second World War because of it's similarities to their native Austria. Still a family run business, the've been making artisanal cheese on their certified organic, regenerative farm since 2009.
