Wallykase

A new cheese from the producer of the beloved Challerhocker has made its way to us.  A traditional Appenzeller profile with all the hallmarks of master cheesemaker Walter Rass. The texture is elastic and smooth, with few eyes and light dappling of crystals. Flavors are balanced on the palate between warm cream, malt, and dried onion. Perfectly snackable and approachable yet a truly unique Appenzeller.

Appenzeller is a raw milk, cooked, pressed, washed rind cheese known for its dense creaminess and light spice. Wallykäse is the return of Walter’s Appenzeller that has brought joy to tables near and far and represents the freedom to be yourself wherever you are.

We ship nationwide via FedEx via Ground or 2 Day Express. Shipping is free for subscriptions and orders $95+. All others ship for a flat $25 rate.
